1. Radish Sprout and Avocado Tartine

Radish sprouts

Toast a slice of hearty sourdough.

Mash ripe avocado with a squeeze of lime, salt, and pepper. Spread on toast.

2. Broccoli Sprout & Chickpea "Tabbouleh"

Broccoli sprouts

Seasonings ( olive oil, lemon, salt and pepper)
Instructions

In a bowl, combine cooked chickpeas, finely chopped parsley, tomato, cucumber, and red onion.

Stir in a generous 1/2 cup of broccoli sprouts.

Dress with lemon juice, olive oil, salt, and pepper. The sprouts add a lovely fresh texture.
3. Vietnamese rice paper roll with sprouts

Protein of your choice

Rice vermicelli

Mint, Thai basil and cilantro

Sprouts of your choice

Dipping sauce
Instructions

Soften a rice paper round in warm water.

Layer rice noodles, fresh herbs (mint, basil), and your protein (shrimp or tofu) on the wrapper.

Add a handful of fresh sprouts.

Fold the sides in and roll up tightly.

Serve immediately with nước chấm (fish sauce dip) or peanut sauce.
